No Bake Key Lime Cheesecake Recipe!
Ingredients:
For Crust:
- 2 cups almond flour
- 1/3 cup salted butter
- 3 tablespoons granulated swerve sweetener
For Filling:
- 2 medium ripe avocados
- 12 ounces cream cheese
- 4 limes
- 1 cup granulated Swerve
- 1 teaspoon vanilla extract
How to prepare No Bake Key Lime Cheesecake:
- Line the bottom of a 9-inch pie dish with parchment paper.
- To make the crust combine almond flour, butter, and swerve with an electric mixer.
- Press the dough into the bottom of the pie dish.
- For the filling, combine the cream cheese, avocado, granulated swerve, vanilla extract, lime zest, and lime juice from all four limes in a food processor.
- Blend until the filling is smooth.
- Spread the filling into the pie dish evenly.
- Refrigerate for at least two hours or until the pie is firm.
- Slice and enjoy!
