Mexican Chicken Casserole Recipe!
Ingredients:
- 2 pounds boneless skinless chicken breast
- 14 ounces diced green chilies
- 3 cups Mexican shredded cheese. divided
- 1 cup sour cream
- 1/4 cup sliced olives
- 1 tomato diced
- 1 avocado diced
- Fresh chopped cilantro
Instructions on how to prepare Mexican Chicken Casserole:
- Preheat oven to 400°.
- Butter or grease a 9 x 13“ casserole dish.
- Brown chicken over medium heat in oil, 3 minutes per side.
- Arrange chicken in dish overlapping as little as possible.
- In a medium bowl combine sour cream, green chilies including juice, and 2 cups cheese.
- Place mixture on chicken, then top with one cup of cheese.
- Bake at 400° for 15 minutes until cheese is melted and sauce is bubbling.
- Garnish with diced olives, tomatoes, avocado, and cilantro.
