Mexican Breakfast Casserole
Ingredients-
- 1 lbs ground breakfast sausage
- 1 packet taco seasoning
- 10 Oz can of Rotel
- 7 eggs
- 1/2 cup heavy whipping cream
- 2 cups shredded cheese
Instructions-
- Brown the sausage and add taco seasoning.
- Place in the bottom of a sprayed casserole dish.
- Cover with Rotel.
- Whisk eggs and heavy whipping cream, salt and pepper to taste then pour over the top of the Rotel.
- Cover with shredded cheese and bake at 375° for 35 minutes
- Top with sour cream and salsa
