Mexican Breakfast Casserole

Ingredients-

  • 1 lbs ground breakfast sausage
  • 1 packet taco seasoning
  • 10 Oz can of Rotel
  • 7 eggs
  • 1/2 cup heavy whipping cream
  • 2 cups shredded cheese

Instructions-

  • Brown the sausage and add taco seasoning.
  • Place in the bottom of a sprayed casserole dish.
  • Cover with Rotel.
  • Whisk eggs and heavy whipping cream, salt and pepper to taste then pour over the top of the Rotel.
  • Cover with shredded cheese and bake at 375° for 35 minutes
  • Top with sour cream and salsa
