Mama Terry’s Keto Frittata

Mama Terry’s frittata keto recipe!

Ingredients:

  • 1 tbsp. extra-virgin olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 c. baby spinach
  • 1 c. bell peppers, chopped
  • kosher salt
  • 8 large eggs
  • 2 tsp. dried oregano
  • 2 tbsp. heavy whipping cream
  • Freshly ground black pepper
  • ½ c. shredded mozzarella
  • ½ c. shredded cheddar
  • ½ c. parmesan
  • 1 lb. Italian sausage, browned
  • 2 cups chopped ham

Instructions on preparing Mama Terry’s Frittata:

  • Preheat oven to 425°.
  • In a large oven-proof skillet over medium heat, heat oil.
  • Brown Italian sausage and add onions, garlic and bell peppers and cook until tender, 5 minutes, then add spinach.
  • Cook until wilted, 2 to 3 minutes, and season with salt.
  • In a large bowl, whisk together eggs, oregano, and heavy cream and season with salt and pepper.
  • Pour eggs over vegetables and sausage in skillet and cook until edges are cooked, 4 to 5
    minutes.
  • Top with cheese and ham and transfer to the oven to bake until eggs are cooked through, 5 to 6 minutes more.
