Mama Terry’s frittata keto recipe!
Ingredients:
- 1 tbsp. extra-virgin olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 4 c. baby spinach
- 1 c. bell peppers, chopped
- kosher salt
- 8 large eggs
- 2 tsp. dried oregano
- 2 tbsp. heavy whipping cream
- Freshly ground black pepper
- ½ c. shredded mozzarella
- ½ c. shredded cheddar
- ½ c. parmesan
- 1 lb. Italian sausage, browned
- 2 cups chopped ham
Instructions on preparing Mama Terry’s Frittata:
- Preheat oven to 425°.
- In a large oven-proof skillet over medium heat, heat oil.
- Brown Italian sausage and add onions, garlic and bell peppers and cook until tender, 5 minutes, then add spinach.
- Cook until wilted, 2 to 3 minutes, and season with salt.
- In a large bowl, whisk together eggs, oregano, and heavy cream and season with salt and pepper.
- Pour eggs over vegetables and sausage in skillet and cook until edges are cooked, 4 to 5
minutes. - Top with cheese and ham and transfer to the oven to bake until eggs are cooked through, 5 to 6 minutes more.
