Low Carb Skillet Enchilada Recipe!
Ingredients:
2 low carb tortillas
1 lb ground beef
1 packet taco mix
1 cup queso cheese
1 cup pico de gallo
1 1/2 cups shredded cheddar cheese
Instructions on how to prepare Low Carb Skillet Enchilada:
- In 10” cast iron skillet layer in order (use a casserole dish if you do not have a cast-iron skillet) Tortilla, ground beef, taco mix, queso cheese, Tortilla, pico de Gallo, and cheese.
- You can add jalapeños if you like.
- Bake in the oven at 375 degrees for 40 minutes. Let cool for 5 minutes and serve.
