Let’s prepare keto Enchilada Muffins recipe!
Ingredients:
- 1 1/2 lbs ground beef
- 1 cup cauliflower rice
- 1 cup enchilada sauce
- 1/2 cup egg whites
- 2 1/2 teaspoons taco seasoning
- 1 teaspoon onion powder
- 1 cup shredded cheese
Instructions on how to prepare the Keto Enchilada Muffins:
- Cook cauliflower rice and squeeze all the water out of it.
- Mix all of the ingredients together by hand or with a mixer.
- Spray muffin pan with avocado oil.
- Scoop into muffin pan should make 12 muffins.
- Bake at 375 for 20 minutes, remove from oven, top with more shredded cheese then return to oven for 10 more minutes.
