- 2 eggs
- 1/2 cup mild cheese shredded
- 3 tablespoons of almond flour
- 1/2 teaspoon baking powder
- A dash of onion powder
- Salt and pepper to taste

- Cook cauliflower rice and drain well.
- Place in a clean dishcloth and squeeze all liquid out.
- Combine 1 cup of prepared cauliflower, two eggs, and salt and pepper to taste.
- Add shredded cheddar, 3 tablespoons of almond flour, half a teaspoon baking powder, and a dash of onion powder.
- Mix all ingredients well.
- Spray oil on the heated waffle maker.
