Guacamole Dip Cups

Ingredients –

• 3-4 low carb tortillas

• olive oil

• 2 avocados

• 1/2 white onion

• 1/2 cup cherry tomatoes

• Juice of 1/2 lemon

• Salt, pepper

• Fresh parsley

Instructions-

  • Cut tortillas in 3 inch circles
  • Lightly brush both sides of these with oil.
  • Press each mini wrap into the cups of a muffin baking tray to create a small basket shape.
  • Bake at 375°F in a convection oven for approximately 10 minutes.
  • Combine all ingredients in a bowl.
  • Fill cups when then are cool from the oven.
