Cranberry Pecan Chicken Salad.
Ingredients:
- 2 cups shredded chicken
- 1/2 cup Mayo
- 1/2 cup plain Greek yogurt
- 1 chopped celery stalk
- 2 Tbsp chopped red onion
- Salt and Pepper to taste
- 1/4 finely diced low sugar dried cranberries
- 1/4 cup chopped pecans
- 1 Tbsp Dijon mustard
Instructions:
- shred chicken and chopped and ice, celery, nuts and pecans.
- Combine everything in a bowl.
- Serve on a bed lettuce, or on keto bread or a low-carb wrap.
