Breakfast Casserole!
Ingredients:
- 6oz bacon about 5 slices chopped
- 1 cup onion chopped
- 2 cups bell peppers( any color) chopped
- 12 eggs
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 cup shredded cheddar cheese
Instructions:
- Preheat oven to 350 degrees
- Grease 9-13 casserole dish set aside
- In large skillet over medium heat cook bacon until soft
- Add garlic, onion and peppers and cook until bacon starts to brown.
- 5-10 minutes covered.
- Remove from heat and let cool.
- In a bowl whisk the eggs and add the salt and pepper.
- Add the bacon/veggies to the eggs and combine.
- Add cheese and combine
- Pour into baking dish and spread evenly.
- Bake for 25-30 minutes.  Â
- Cool for 5 minutes and serve.
- Cut into squares and put in airtight container and refrigerate.
