Easy Chicken Enchaladas!
Ingredients:
- 1 can chicken ( we used left over rotisserie chicken)
- 1 jar salsa verde
- 1 cup shredded cheese of choice (we used colby Jack)
- Low carb tortillas
Instructions:
- Mix chicken with half jar of salsa verde and half of the shredded cheese
- Place mixture in tortilla and roll
- Place in a casserole dish
- Top with the remaining salsa verde and cheese
- Bake at 350 degrees for 20-25 minutes until cheese is melted
