Italian Pasta (or anti pasta) Salad Recipe!
Ingredients:
- Â 4 cups of bow tie pasta or cauliflower florets (cut into 1″ pieces)
- Â 1 cup cherry tomatoes, halved
- Â 1 cup mozzarella cubes
- Â 1 cup black olives, pitted
- Â 1 cup pepperoni sliced
- Â 1/2 cup green bell pepper, diced
- Â 1/2 cup Eat’s Italian Dressing
- Â 2 tablespoon fresh basil, chopped
- Â Salt and pepper to taste
Instructions on preparing Italian Pasta (or anti pasta) Salad:
- Cook pasta according to package instructions.
- Drain and then rinse with cold water.
- If you’re using cauliflower, cut into 1″ pieces and steam, covered, in the microwave with 1/4 cup water for 3 to 4 minutes or until crisp-tender.
- You do not want the cauliflower too soft, or it will fall apart in the salad.
- Drain and then rinse with cold water.
- Mix all ingredients in a large bowl.
NOTE: if using cauliflower you will need only 1/2 cup Italian dressing. Use 1 cup if you use pasta) Cover and refrigerate for at least 2 hours.
7. Adjust salt and pepper to taste, add more dressing if needed. Serve and enjoy!
