Creamy Tuscan Salmon Recipe!
Ingredients:
- 3 salmon fillets
- 2 teaspoons olive oil
- 2 tablespoons butter
- 1 small yellow onion, diced
- 1/3 cup broth
- 5 oz jarred sun-dried tomato
- 1 3/4 cups heavy cream
- Salt and pepper, to taste
- 3 cups baby spinach leaves
- 1/2 cup grated Parmesan
- 1 tablespoon fresh parsley, chopped
Instructions on preparing creamy Tuscan salmon recipe:
- Heat oil in pan over medium-high heat and add salmon.
- Seer on both sides until done, about 5 minutes on each side.
- Remove from skillet.
- In same pan add onions and brown.
- Add in sun dried tomatoes and fry for 1-2 minutes.
- Add vegetable broth and cook to reduce slightly.
- Reduce heat to low and add heavy cream simmer for 3-4 minutes.
- Season with salt and pepper. Then, add Parmesan cheese and allow to simmer until cheese melts.
- Return salmon to pan and sprinkle with parsley.
- Spoon sauce over salmon and serve.
