Cheesy Egg and Chorizo Muffins is a delicious breakfast recipe!
Ingredients:
- 5 eggs
- 5 tablespoons butter, melted
- 3 tablespoons of sour cream
- 2 cups cheddar cheese shredded
- 1 pound chorizo
- 1/2 cup coconut flour
- 1/4 teaspoon sea salt
- 1/4 teaspoon garlic powder
- 1/2 teaspoon of baking powder
Directions on preparing a Cheesy Egg and Chorizo Muffins:
- Preheat oven to 375°F grease muffin tins, or use silicone molds or liners.
- Melt butter and cool in the refrigerator for five minutes.
- Brown chorizo in skillet over medium heat.
- In a medium bowl, whisk butter, eggs, sour cream, baking powder, salt and garlic powder.
- Mix in coconut flour.
- Mix in chorizo and cheddar cheese.
- Fill muffin tins 3/4 full, bake for 15 to 18 minutes, until lightly browned.
