Keto Lemon Coconut Balls Recipe!
Ingredients:
- 1 cup of Almond Flour
- 1 cup of Unsweetened Desiccated Coconut, finely shredded
- ⅓ cup of Powdered Erythritol
- 1 Lemon, zest only
- 2 tablespoons of Lemon Juice
- 3.5 ounces of Cream Cheese, softened
- 1 teaspoon of Vanilla Essence
- ⅓ cup of Unsweetened Desiccated Coconut, for coating
Instructions on how to prepare Keto Lemon Coconut Balls:
- In a mixing bowl, add the almond flour, coconut, and sweetener. Mix together.
- Add the remaining ingredients, except the extra coconut, and mix into a thick dough.
- Take tablespoon-sized pieces of dough and roll into balls.
- Roll each of the balls through the extra coconut and place onto a cookie sheet.
- Place in the fridge for 15 minutes before enjoying!
